Oh man, I have a lot of headcanon for Mozzie, which piece to pick?

I think Mozzie is faking some of his more extreme quirks. Don't get me wrong, I think he's naturally an anxious oddball, but I think he realized a long time ago that people underestimate him when he plays up the oddness, and that it makes people forget that he's a formidable intelligence, supremely gifted at separating them from their valuables, or anything else he wants to possess for himself. This is where some of his more out there conspiracy theories come from, and also where his highly variable food intolerances come from. Or maybe, I just don't like what the writers have been doing with a portrayal of part of my illness, but I like to think he plays up the hypochondria. I also think he taught this trick to Neal, who plays up the flirting, carefree, pretty boy persona instead.

I like this idea. It definitely makes sense. (Have you seen season 4 yet? [Not really a spoiler ahead] If I recall right from the first two episodes, that doesn't really show up when it's just him and Neal, which would make sense if he's playing it up; he doesn't need to play it up around Neal. But I haven't seen the eps for a couple weeks, so I might just be forgetting something.)

Yes, I am all caught up on season 4 (for now) and I too noticed that on the island, with just Neal around, Moz was less intense. Though I loved him trying to unionize Maya's employees.
